Use eval.

for x in 'TEMPLOG' 'TEMPFILELEFT' 'TEMPFILERIGHT'; do
   makeTemp "${x}"   # function that does a lot of processing and
                     # sets makeTempFileName equal
                     # to /tmp/blahblah.??????
   eval $x=\${makeTempFileName}
done
