Certain uses of hwclock will write /etc/adjtime to record clock drift statistics.

Could you please let me know is there any setting needs to be done to get the logs related to system date/time

I'm not sure what sort of logging you'd like to see. Small, single-purpose commands like coreutils don't generally write logs; perhaps the logger(1) command would suit your purposes?
