I tired this and it works very well. One question: Is there a way to see a
list of all keyboard shortcuts?

The program assumes I'm not stupid enough to inadvertently write over
previously assigned shortcuts, but unfortunately that's just not the case

It's absolutly very simple to add menu shortcut of GTK based software.

Do this:
Put the mouse pointer over the menu item you want a keyboard shortcut.
Don't click it, just highlite the item. While it is highlighted. Press the
key combination you want as a shortcut, and you will see that the shortcut
is added in the menu. The keybord shortcut is now ready to use.
