Ok, here’s what I think in greater detail. If you use the current display then you either have a pop-up covering a portion of the screen, requiring a small orientation, and then finding the dice. Now suppose you want to cancel this. Another pop-up appears. I find this distracting and undesirable. I like to keep things visible if possible, and not see things pop up on the screen and off the screen in front of me all the time. This is actually considered a standard design error if it can be avoided, but let’s argue this otherwise.

 

If you really plan to put 21 combos, they will necessarily take up a good amount of screen, reducing the possible board size, OR you will find yourself with 21 very small dominos, making visibility, and thus quick recognition, worse. Remember that people plan to use this on a laptop with a much smaller screen as well. With 6 dice, they are necessarily VERY close to each other thus mouse travel is a strict minimum, and the cancel button is also immediately clear. If you make a mistake, you’ll see it immediately, and not need to make the dice window re-appear and find the combo. The 21 dice combo will also require practice to find them quickly, whereas 6 single dice all grouped together will not, thus enhancing user-friendliness. No training to achieve maximum efficiency over required training is always to be desired. My last two cents.

Well I'd would disagree. One click is always quicker than two.
Is it really so difficult to find 35 instead of 53???
All that kind of thing is virtually automatic in a backgammon players mind.
I suppose we could always program both our dice display ideas...
