Most new GNUstep code gets written using option 1.

Option 2 *should* be the way to go, but I just don't have time to develop Gorm at present (though I will tests/incorporate patches, fixes etc) - so it's really only of use for very simple UIs, without the support for custom objects that IB
provides.

Option 3 is probably a good bet for porting OPENSTEP apps, but I'm not sure it
works well for MacOS-X apps.
