Details:

Imagine you run a remote server.  You perform a kernel upgrade, but you'd
like to perform a test boot first.  In other words, you tell grub to test
boot the new kernel, and if it fails, you call into the hosting company, and
ask them to pop the reset button.  The system comes back up, realizes the
test boot failed and reverts to its previous configuration.
