Well, \fermataMarkup is simply a macro defined as fermataMarkup = \markup { \musicglyph #"scripts.ufermata" }if you want an upside down fermata, you could define the corresponding macro with dfermata instead of ufermata or simply use the corresponding \markup command directly.
