An EAN reader is just a keyboard emulator that type the value of barcode + ENTER or just value of barcode (depending on setup of your barcode reader).

If you use the POS module provided with Dolibarr + Module barcode, then you can search product after a scan so the product is added into the basket of the customer.

When all product are added and when you validate the payment, the invoice is generated and the stock is decreased. You choose into the setup of module POS, which warehouse to decrease.

Note: the automatic decrease of stock when using the POS module of dolibarr is not yet compatible with the module "Lot/serial". So you can use barcode+POS to identify a product (surely what you want) but not a specific instance of a product.

Is it possible to connect a Dolibarr station to a EAN reader, so that when an EAN is recognized (as when you pay at cash time), it deceases the storage of the corresponding product? In French: peut-on faire en sorte qu'jn lecteur de code barre communique avec Dolibarr pour qu'à une caisse enregistreuse, à chaque pointage, il décrémente le stock?
