emacs -Q -L /home/cochard/Org/Coch-git/org-mode/lisp/ 

which ads git Org to the load-path 

perhaps even

emacs -Q -L /home/cochard/Org/Coch-git/org-mode/lisp/ -l 
/home/cochard/Org/Coch-git/org-mode/lisp/org.el 

which even loads Org mode.

You could write a small file with the necessary settings and load
it also 

emacs -Q -L /home/cochard/Org/Coch-git/org-mode/lisp/ -l 
/home/cochard/Org/Coch-git/org-mode/lisp/org.el -l /tmp/minimal-exaple.el
