Bad form to answer my own query, but a brief struggle against my Mac ignorance (alas, 15+ years of Unix, 1 month of a Mac!) revealed that putting the fonts in that package into /Library/Fonts would make them available.
New question: how can I use more fonts than the three that come up in list-fonts:
