But not:

(global-set-key "Y" (lambda()(interactive"*")(insert "Z")))
(global-set-key "Z" (lambda()(interactive"*")(insert "Y")))
(global-set-key "y" (lambda()(interactive"*")(insert "z")))
(global-set-key "z" (lambda()(interactive"*")(insert "y")))

And note that in anycase, using C-q z gives z and C-q y gives y.
