well, my aim is just to learn and play with grub : having fun

but if your aim is to modify a lot grub.cfg inside rescue.iso then the
grub people did foresee long ago (already in grub legacy): just use
configfile to load any external customised cfg
(I expect this because I do not see what else you can modify )
