It depends on what AMD hardware you're talking about. There's atlas3-3dnow for older AMD chips, but I think the newer ones support the sse2 extensions, so I would expect the best performance with atlas3-sse2. (Disclaimer: I only have experience with the Fedora packages, which are very similar to the Debian packages).
