If you do have X11 installed, then run the gnuplot app in your Applications folder.

When it opens, you should see the "Terminal type set to 'aqua'".

At the prompt, type "plot sin(x))"

Do you get a plot window ?

Ok, now I have the latest version of Xquartz, but when I open gnuplot from the applications folder I get:
