Take a look at plot3(x,y,z) function, since each column of matrices x, y and
z forms a separate line, it could do what you want.
x = repmat((1:10)',1,10);
y = repmat(1:10,10,1);
z = peaks(10);
pl = plot3(x,y,z);
for ii=1:10, set(pl(ii),'color','k'); end
produces
