You can find a lilypond package in the Fink distribution.
However, if watch out if it's version 1.6.6 or 1.6.7, since
then the scalable fonts used in PDF output is broken. 1.6.8
or newer are OK.
I'm not sure if TeXShop uses the kpathsea library that Lilypond
uses to work together with the TeX installation, so you may
need teTeX if you want to build Lilypond yourself.
