Read the section on "Explicitly instantiating voices" to realize
what the << {...} \\ {...} >> does exactly. Since it creates
two new Voice contexts, your \lyricsto will skip the full polyphonic
section. The simple workaround is to instantiate the extra Voice
yourself:

|  << { \voiceOne e4( d~ d8) } \new Voice { \voiceTwo g,2~ g8 } >>
\oneVoice r8 r4 | r4 a\p-> |
