Use the Source, Luke...
ly/spanners-init.ly, line 21:
cresc = {
#(ly:export (make-event-chord (list cr)))
\set crescendoText = \markup { \italic "cresc." }
\set crescendoSpanner = #'text
}
I don't know why George used \cresc in the first place though.
