6/8 time, as mentioned in the subject so no inferring necessary, I want
triplet quarter notes, 3 quarters over 2 counts, per bar. A total of 6
quarter notes, triplets, in two bars. What is wrong with coding it the
way I have it?

there are two measures of quarter note
triplets followed by
a dotted half note - they all end up in one measure together.
That's because Lilypond is doing exactly what you've asked it to do, in
light of the \times 2/3 command.
What are you hoping to see in those bars?
