This has been changed, it seems. In 2.13.7 I use for example:
\time 12/16
\overrideBeamSettings #'Score #'(12 . 16) #'end #'((* . (3 2 2 3 2)))
which in your case should be:
\time 11/8
\overrideBeamSettings #'Score #'(11 . 8) #'end #'((* . (3 3 2 3)))
