Where does one find the KeySignature.padding-pairs defaults? I did a file search inside the Contents folder of my Lilypond application (Mac OS X) for an explicit setting, but couldn’t find it. I thought it would be in define-grobs, but wasn’t there.

From what I can gather, the default is to gracefully fail (i.e., fall back to 'padding, but add a little extra space for naturals) when the user hasn't provided anything. Implementation details are found in lily/key-signature-interface.cc.
