Monit can be stopped by "monit quit".

However - if you registered Monit for example in inittab or upstart for respawn on exit, t will be started again by init/upstart => to stop it, you'll need to modify and reload inittab or stop via upstart.

there is no decent way to stop it besides un-installing monit.
