Follow-up Comment #2:

This doesn't appear to be an Octave issue, but a gnuplot one.  Possible
workarounds include 1) using the FLTK backend (particularly with the
development version of Octave where much work has been done on this plot
engine) or 2) using a terminal, such as postcript, for final display of plots.
