gnuplot needs a true helvetica font for the conversion
to a picture.

Try to copy Helvetica.ttf on /usr/share/fonts/TTF
This is my solution on cygwin.

Probably for plots on X, X-server makes the translation from 
Helvetica to something like Arial and no one notice the 
absence of the Helvetica font.
