Which version are you using? The current Pan, 0.14.2.91, has
spell-checking available as a *compile-time* option. It was introduced
in version 0.13.0, but if yours does not have it you will likely need to
re-install Pan using an rpm, deb, tbz or whatever (depending on your
distro) that was built with spell-checking enabled. This will also
require gtkspell, but hopefully your distribution's software management
system will pick that up for you. (If not, you'll need to put it in, and
any dependencies it has...)
Configuration of spell-checking itself *might* be in Gnome Control
Center; I'm not sure about that. I thought I found something like that
once, but I don't use GNOME as my desktop so I don't often go into its
configuration.
