This isn't a solution ..

the sent-mail works for me and our users (except that it waits for a
successful sent response from the smtp server before putting it into the sent
folder = email lost if errors occur)


Maybe confirm that they have a sent-mail folder?

Confirm that the pref is being saved and reappears properly when you go back
to user prefs?
