Configure your Xen HVM guest to use the serial.
Compile Qemu as emulator:
./configure --disable-xen --target-list=x86_64-softmmu
then use qemu directly to boot your guest:
./qemu-system-x86_64 -hda /path/to/file -serial tree:/path/to/log,pty
you can connect to the pty using a program like picocom:
picocom -b 115200 /dev/pts/$NUM
