You probably set your From header address field properly, but the GNU
servers were looking at your SMTP envelope sender address, which is
independent.

Yes. How to change it depends on whether your
/usr/{lib,sbin}/sendmail program is really sendmail or some other
MTA's compatibility wrapper (and if so, which MTA).
