I've just added a GUI menu entry for Czech language that sets the locale to 
cs_CZ. In the next build it should appear.

Btw, also if there's no GUI option for the desired language one can always 
set it by entering the command manually "set lang cs_CZ". Once saved gnubg 
will remember this setting.
