The easier way is using perl:

find -type f | grep -v CVS | xargs perl -pi -e"s/Firefox/Icecat/gi"

I haven't tried it and don't know if it works.  It doesn't modify
CVS files to reduce network usage, in future you can simply
update these files without re-do the entire checkout.
