Here are some entries from my menu.lst regarding colors,

color light-gray/blue black/light-gray
# Change color scheme.

title Alternate menu colors to Light-Gray/Red Black/Light-Gray/
color light-gray/red black/light-gray
# Entry 15: Alternate Menu Colors
title Alternate menu colors to Light-Gray/Cyan Black/Light-Gray/
color light-gray/cyan black/light-gray
# Entry 16: B&W Menu Colors
