I hesitate to mention it, but, there is a setting mentioned in the Internals 
Reference, under Lyric_engraver, that might do what you ask
\set lyricMelismaAlignment = #CENTER

This setting is not in the main documentation or the test suite, so it is safer 
to follow Trevor's later suggestion based on the current manual.
