Just wondering if bind can assign other shortcut to change vi mode instead the Esc key. In vim, it is usually faster for me to type C-C.

You can bind whatever you like to `vi-movement-mode' in the vi insertion
keymap; something like

bind -m vi-insert '"\C-c":vi-movement-mode'

If you do this, you probably want to use stty to change your interrupt
key to something else.
