GNU tar upstream does not provide manual page. The page you see is
probably distro-specific. E.g. in Fedora we have (mostly) generated
manual page from 'tar --help' output. It is pity upstream tar does not
provide manual page but this topic was here many times.

The link Paul posted points the official tar documentation which is
usually packaged also as info documentation. E.g. in Fedora, `man tar`
says that for full documentation you should look into `info tar`.
