I just have a thought - when we use a signal source block to generate a sine wave and use the FFT block to visualize the power spectrum, then the noise floor we see at the FFT window - is it the quantization error of the ADC within the PC running GNURadio?

There is no "ADC within the PC running GNURadio".

But there *is* quantization noise, because floating-point numbers in a computer have finite precision.
