By the way, a physical hint:
what you get when a plane approaches or leaves from you is a phase of
the wave that /changes linearly over time/, if you think about it.
A linearly over time changing phase is a frequency.
What you want to model is probably Doppler frequency shift in addition
to a time shift.
The way to do that is not a simple delay.
