There's no default setting or "switch to turn if off" that I know of, 
but as a workaround you could always move the main menu off the 
screen. Most applications keep track of the location of windows and 
menus and will automatically "hide" the menu next time you start them.
That wouldn't work with WildMenus or default setting 
'NSMenuInterfaceStyle = NSMacintoshInterfaceStyle' though.

Alternatively you could take a look at the WildMenus sources and write 
a bundle that would automagically remove the main menu from the 
screen. If put in NSGlobalDomain's GSAppKitUserBundles it would do 
that for all applications.
