I also have a Librem 5, so I speak from some experience here. Unless you are planning to run the Librem 5 solely in a docked mode, I think you will have a poor experience with GNUmail due to the small size of the Librem 5's screen. (If you do intend to run it solely in docked mode, I'd be interested to hear--off list--about your setup.)
The Librem 5's built-in GNOME applications have been built with libhandy[1], a GNOME library which provides methods for a single application to adapt the way it presents itself based on which screen (i.e., phone screen or actual monitor) it's running on. To the best of my knowledge, GNUmail and other GNUstep packages are not built with anything similar.
