You can do that in the same way as in other platforms.  For example,

  (set-fontset-font "fontset-NAME" 'japanese-jisx0208
                    '("ヒラギノ角ゴ*" . "jisx0208.*"))
  (set-fontset-font "fontset-NAME" 'japanese-jisx0201
                    '("ヒラギノ角ゴ*" . "jisx0201.*"))
