I already commented and added some code; but maybe the changes does not
worth creating a mode because undo-redo will be enabled bu default in
the menu-bar.

But the idea was to do:

[remap undo] -> undo-only

+

C-? and M-_ -> undo-redo

But binding C-? could be problematic in some terminals so probably is
better to avoid it.
