I've always found the effect of show-paren-mode pointless (and rather
annoying) when writing prose, e.g. in org-mode.  I therefore think it
should be enabled by default only in prog-mode.

By the way, VSCode seems to have a feature to enable highlighting the
enclosing brackets when inside expressions.  Perhaps we should add
that feature as well (unless we already have it)?
