I don't really have a strong opinion here, but the -set/-unset
variations seemed to be the most popular ones when this was discussed a
few weeks back.
And it does allow for a neater grouping if you're looking for the
commands that operate on the global/local/general bindings:
keymap-global-binding
keymap-global-set
keymap-global-unset
etc.
