I don't know anything about mac os x.
I pipe conky into my bar. I use the following command:

emacsclient -e "(my/org-clocked-in)" | cut -d '"' -f 2
#+end_src
Here is the function I call. I might have stolen it from somewhere, but
I haven't written a source in my .emacs.

Judging from this¹ you wont be able to get it in the dock easily
though.
