    You were right!
    
    In my success of starting to have more diverse number of latex
    exports in my yearly journal, it was being polluted because the
    global ~#+LATEX_HEADER~ stuff [1]
    
    it went unnoticed because it was in lowcase and I was only searching
    for the uppercase, these were the affecting lines:
    
    #+latex_header: \usepackage{setspace}
    #+latex_header: \onehalfspacing
