Could you try making a dribble file from your session?  That way, you
could try to repeat whatever sequence of editing commands led to the
crash.  Since the text property data structure belongs to just one buffer,
I think the same sequence of edits on a single buffer with the same starting
text could reproduce it.

However, that approch won't work if the timing of jit-lock
fontification plays a role.  So could you please try

(1) Turning off stealth fontification, and

(2) setting redisplay-preemption-period to nil

If you can stand doing that all the time, I think it will
result in making fontification a reproducible consequence
of your sequence of editing commands.   If the bug bites again,
we will catch it.
