I don't think FluidSynth does output different formats for OSS. Why not
try ALSA for your sound card, I'm sure its supported. ALSA has a plugin
interface (which is sometimes sub optimal), but it can convert between
different formats, sampling rates, etc.

Actually, Fluidsynth, alsa, & envy24 work great together. However, mplayer, xmms, alsa & envy24 do not seem to get along very well.
The oss/pro drivers work very well with mplayer & xmms on the envy24.
