When installing from the Ubuntu repositories, I haven't seen any way to choose levels of the software to be installed.

You can download package files only (not install), but it doesn't tell you where the packages are that you downloaded. I can probably find them, but I may miss dependencies I need.

I don't remember that the dependency list changed between 11.04 and 11.10, so it should be as simple as "sudo apt-get build-dep fluidsynth", download the source package, build it with "dkpg-buildpackage -b" and install the resulting debs.
