address@hidden is your JID. Gaim asks you to specify it in two
parts, 'username' in one textbox, and 'gmail.com' as the "server" in
another.

Since the stream is TLS secured, how do I capture the XML traffic?
Ethereal would not work I guess.

Your XMPP library might have an option to dump the XML stream before
encrypting. Check for it. Otherwise you might want to hack the library
a bit to make it do that.
