There are already similar efforts in the works. See Unhosted Libre
Office [1] (Unhosted was born on the Diaspora Dev list [2]), and Web ODF
[3].

That's not so. You can host your own if you choose, or host it on a
friend's server, or host it on generic web-hosting, or, as I would do,
on a freedombox. There are and will also be publicly hosted Diaspora
servers where you can register an account, but using it in this way
undermines the point of the project to a large extent - to be a
*decentralised* social network.
