Bonnie,

This works for me in Debian:

/home/bonnie/.local/share/applications/mimeapps.lst

(same syntax as mimeinfo.cache)

(in fact, the files could be identical, just make a symlink to mimeinfo.cache
and add your content)

As a hint, the package installation files are in /usr/share/applications.

This mime system is an anachronistic thing, today, should be replaced on most
desktops already, but older gtk apps seem to still use it and it's sitll
maintained by many (?) installers.
